Why Vacuum Packing Is Popular In The Food Industry

Vacuum packing involves the removal of air from the interior of a package immediately prior to sealing the package. But the crucial question is to what is the benefit of removal of air while packaging food items. Air is one of the greatest enemies for almost all types of food products. Lack of air prevents mold and bacteria growth thus increasing the shelf life of food products. With this innovative packing, there is a slow rate of oxidative reactions like lipid oxidation and protein oxidation, thus lowering the spoilage of food items like apples or bananas.

With vacuum sealers available with useful functional applications like air return, sealing, vacuum marinating, and many more, it is easy to use, and seamlessly installed making it the most beneficial way to store or preserve any food item.  The materials used for vacuum packing must be strong enough to withstand the vacuum, flexible enough to form around the food product, and have a very specific level of heat sensitivity. It has become a common method for long-duration storage of dry food items like cereals, nuts, cured meats, coffee, and cheese, as well as short-duration storage of fresh food items like vegetables, meats, and liquids. The vacuum packing sealers can adapt to a variety of containers like cans, jars, trays, and pouches.

A few advantages of using vacuum packing in the food industry are:

  • Perfect For Respiring Products

Moderate vacuum packaging (MVP) is a variation of traditional vacuum packaging that is used for respiring products such as prepared fruit and vegetables. The food product is packed in a rigid airtight container or a pouch and is surrounded by normal air, but at a reduced pressure around one-third of normal atmospheric pressure. This helps to slow down the metabolism of the product and the growth of organisms.

  • Extends Shelf Life

The shelf life of food is greatly extended when vacuum packing is used. Vacuum sealing food preserves it 3 to 5 times longer than food stored in plastic containers or bags. The exact amount of time food will last in vacuum sealing varies depending on the storage method used.

  • Avoid Usage Of Chemicals Additives

Vacuum packing does not require the usage of strong chemical substances or additives to preserve the food. With consumers preferring to consume food items having lesser additives, vacuum packing ensures the food item remains as natural as possible to maintain quality and taste.

  • Protect Food Items From Freezer Burn

Vacuum packing helps to protect food items from freezer burn and dehydration. Freezer burn is a condition that occurs when frozen food has been damaged by dehydration and oxidation due to air reaching the food.  Vacuum sealing helps prevent this by forming an effective barrier to keep air from coming in contact with the food.
